Thursday, June 10, 2004 FAQ: What is Couverture? Is It Safe to Eat? Couverture literally means, “covering.” Couverture is used to refer to chocolate that is manufactured specifically to enrobe chocolate, though now it is used to described most chocolates made for use by professionals for cooking and baking, too. Generally, couverture has a slightly higher percentage of cocoa butter than a normal eating chocolate to enhance its fluidity (it’s thinner when it’s warm) making it possible to achieve thin enrobings and shell molds. This extra cocoa butter also makes couverture more expensive than eating chocolate. Because of this extra cocoa butter content, some people prefer eating couverture to regular eating chocolate.
