Question: What Do You Know About Dream Chocolate of Boise, ID?

A reader writes: “I would like to have any information that you have on “dreamchocolate” in Boise.” While I had never heard of them before, a few minutes on-line sleuthing revealed ... not much. Dream Chocolate is a product of Salmon River Foods, located in Boise. Their specialty appears to be private-label chocolates for wholesale accounts.

There is a fairly wide variety of novelty bars for sale on the site, but it’s hard to tell from the descriptions if they are all different or if it’s just the wrappers that are different. They don’t say what chocolate they use to make the bars, either. The organic chocolate bars at $2 for a 1oz bar at wholesale are expensive compared with what I consider to be the market leader in taste, Dagoba. I can’t find any mentions of them in places where people might normally comment on their quality.

  1. Following up on this I was contacted by the president of the company recently. They say that they blend (using stock couvertures) more than a dozen different flavors of chocolate for their bars. All of the bars are hand poured and molded. Their uniqueness is their fun labels which are sure to bring a smile to just about anyone's face.

I've been a chocolate lover ever since i can remember and i've been wanting to learn how to make one and hopefully become a chocolatier... can you help me on what i should know, what ingredients and tools i need just to get me started...more like chocolate 101? ive been searching for a short term class here but most of the culinary schools offers pastry and baking only. thanks
