Question: Classes Just in Chocolate in NY Tri-State area?

A Reader Writes: “I wanted to find out if there are any classes on chocolate making (not desserts using chocolate) in the NYC tristate area (including North Jersey). I am not looking for a full time daytime course or online programs, but rather a series of a few classes that provide hands-on techniques and basic skills.” Believe it or not, there are very few places to go for classes just in chocolate. Most treat chocolate as a part of a comprehensive pastry and baking program....

However, one such place that does offer just such a program is the Institute for Culinary Education (formerly Peter Kump’s Cooking School) here in Manhattan.

Chocolate 1 Intensive and its companion Chocolate 2 Intensive were last offered in June, but I think that they are offered quarterly or semi-annually. Here’s the link to the entire calendar of recreational classes: http://www.iceculinary.com/recreational/calendar.shtml

  5. One more place to take chocolate classes, but more expensive than Wilton is the Notter School in Orlando. The price is a little over $800 for about a week's worth of classes. They do require a 50% deposit to hold a class and they also get famous instructors there as well. A #### suggestion if you go is the Florida Mall ####. They give students a great discount and it's within walking distance of the school.
