Wednesday, June 23, 2004 FAQ: Is "white chocolate" really chocolate? Yes and no ... it depends on what country you’re in. Every country has standards of definition for what chocolate is. These standards define the minimum levels for things like cocoa, sugar, and milk content in order to be classified as a particular type of chocolate. For many years, there was no standard defining “white chocolate” here in the US so it was technically illegal for a manufacturer to use the term “white chocolate” to describe their product on the label. This situation has passed and now there is a legal standard of definition for white chocolate. White Chocolate contains no cocoa powder, which is why it is white. The best white chocolates will have at most the following ingredients:
Cocoa Butter
If there are other fats in the white chocolate, try to avoid it as those fats tend to negatively affect the texture and mouth feel.
